A few can reach prices that rival precious gemstones. We’ve been fortunate to taste them on trips to Japan, France and Italy and they’re a true delicacy.

These rare and expensive mushrooms are the star attraction on any plate. From the fungal kingdoms of the Himalayas to the oak forests of Perigord, here are the world’s most coveted edible fungi.
1. Yartsa Gunbu (Caterpillar Fungus) – up to $138,000 per kg
Priced at up to $63,000 per pound (approximately $138,000 per kg), this caterpillar-fungus hybrid is the most expensive mushroom in the world. Also known as Ophiocordyceps sinensis or caterpillar fungus, this rare mushroom is believed to be a natural aphrodisiac and medicinal ingredient in Traditional Chinese Medicine.
Found around the Tibetan Plateau and the Himalayas, these mushrooms only occur in high altitudes which makes them difficult to acquire. In 2016, a district in Nepal reportedly collected $4.7 million worth of this fungus, making it the world’s most valuable parasite.
The Yartsa Gunbu infects ghost moth caterpillars by eating them within, after which the caterpillars become mummified. When spring emerges, the time of rejuvenation and life, the fungus blossoms from their corpses.
2. European White Truffles – up to $11,000 per kg
Among the most expensive food in the world, the European white truffle is a refined and singular ingredient. Found in the undergrowth of oak trees in Piedmont and Tuscany, Italy, these elusive fungi cannot be cultivated – every single one must be hunted in the wild.
Truffle hunters search with trained dogs (or, traditionally, truffle pigs) drawn by the fungus’s intense, garlicky aroma. Many hunt at night to keep their best locations secret. Retail prices typically range from $8,800 to $11,000 per kg, with exceptional specimens fetching considerably more at auction during the annual Alba White Truffle Fair. The 2026 Alba White Truffle Fair runs from October 10 to December 6, 2026.
Their notoriously short shelf life of just 5-7 days after harvest adds further to their exclusivity and cost.
3. Japanese Matsutake Mushrooms – up to $8,800 per kg
Matsutake mushrooms are native to Japan, where they are revered as the ultimate symbol of autumn. Primarily found under the roots of red pine trees in regions including Nagano, Iwate, and Kyoto, this highly valued mushroom has a rich, spicy, and deeply aromatic flavour unlike anything else in the fungal world.
The Guardian has reported on the significant decrease of red pines that has contributed to a 95% reduction in Japanese production over the past 70 years.
Prices are volatile – in poor harvest years, matsutake can reach $8,800 per kg, while good harvests may see prices fall to $2,200 per kg. The mushroom is now considered a near-threatened species by the IUCN, threatened by the pinewood nematode invasive pest.
The mushroom’s distinctive aroma – at once spicy, earthy, and almost cinnamon-like – is considered irreplaceable in Japanese haute cuisine.
4. Black Truffles – up to $1,980 per kg
The black truffle is a rich delicacy found in Marche, Molise, and Piedmont in Italy, the Perigord region of France, parts of Spain, and Oregon in the United States. With a subtler taste than their white counterparts, these dark nuggets are typically priced at $1,760-$1,980 per kg depending on variety and season.
Truffle dogs accompany the hunters as they scour the forest floors around mature oak trees.
The most prized variety is Tuber melanosporum, the Perigord black truffle. The 2026–2027 Périgord truffle market season runs from early December 2026 through February 2027 across the Dordogne region in France.
The summer truffle (Tuber aestivum) offers a more affordable and accessible option from June to September.
5. Chanterelle Mushrooms – up to $500 per kg (dried)
Chanterelles are one of the most beautiful mushrooms I’ve come across – fleshy golden caps with false gills and a delicate apricot scent that you can smell before you even slice into them. Their peppery, fruity flavour is unlike any cultivated mushroom – a quality that makes them impossible to replicate commercially. They are found in woodland areas across Europe and North America, typically appearing after warm, humid conditions following rain.
Dried chanterelles can reach up to $500 per kg, while fresh chanterelles typically sell for $66-$132 per kg depending on season and region. We have had the pleasure of eating chanterelles many times – they remain one of our personal favourites for their brightness and complexity in a simple butter sauce.
6. Enoki Mushrooms – up to $238 per kg
Also known as Enokitake, Golden Needle, or Velvet Foot, the delicious flavour and velvety texture of these long-stemmed mushrooms feature in a wide variety of Asian cuisines. Enoki mushrooms are priced at around $238 per kg and are often found growing in large, snowy bouquets up to 12cm in height.
These mushrooms are also associated with a number of nutritional and medicinal properties, including potential heart health benefits. Commercially cultivated enoki have a milder flavour than their wild counterparts, which appear in woodlands during winter months.
7. Morel Mushrooms – up to $880 per kg (dried)
Morel mushrooms are among the most prized edible fungi in the culinary world, foraged exclusively in the wild. They emerge in early spring – often at the base of dying elm, ash, and oak trees – and disappear within 4-6 weeks.
Their honeycomb caps and rich, earthy umami flavour make them a genuine seasonal event for chefs and foragers alike.
Fresh morels range from $66-$220 per kg, while dried morels can reach $880 per kg. Prices spike sharply when spring is short or harvests are poor.
We consider the morel one of the most extraordinary mushrooms we have eaten – roasted simply in butter with thyme, there is nothing else quite like it.

Found in the foothills of the Himalayas, as well as in Brazil and Bulgaria, this wild mushroom cannot be commercially cultivated, making it highly sought after. Yellow Morels – also known as Gucchi mushrooms in India – are closely related to the morel but grown in dramatically different terrain. Fresh prices typically range from $44-$198 per kg.
In Indian haute cuisine, Gucchi are considered among the most prestigious seasonal ingredients, appearing in specialist restaurants only during the brief Himalayan spring foraging window.
9. Lobster Mushroom – up to $99 per kg
The lobster mushroom is not technically a mushroom at all – it is a parasitic fungus (Hypomyces lactifluorum) that attacks and completely transforms other mushrooms, most commonly Russula and Lactarius species. The result is a striking, bright red-orange specimen with a firm texture and a mild, slightly seafood-like flavour that has made it increasingly popular in gourmet kitchens.
Found primarily in the forests of the Pacific Northwest of North America and parts of Europe, lobster mushrooms cannot be cultivated and are available only from August to October. 11. Black Trumpet Mushrooms – up to $88 per kg
Black trumpet mushrooms (Craterellus cornucopioides) are prized for their rich, smoky flavour and distinctive trumpet-like shape. They grow in clusters on the forest floor across North America, Europe, and parts of Asia – often near mossy areas or decaying wood.
When young, their flavour is mild; as they mature, they develop an intensely smoky, umami depth that works beautifully in soups, risottos, and sauces.
Black trumpets typically cost between $66-$88 per kg. They are considered one of the easiest wild mushrooms to safely identify, which has made them a favourite among foragers.
12. Maitake (Hen of the Woods) – up to $88 per kg
Maitake (Grifola frondosa), or ‘Hen of the Woods’, is one of the most sought-after wild mushrooms in both Japan and North America. Its name in Japanese translates as ‘dancing mushroom’, reputedly because those who found it in the wild would dance with joy.

Shiitake are easily cultivated on logs or inoculated sawdust, which keeps prices relatively accessible.

How to Store and Cook Rare Mushrooms
Paying a premium for the world’s most expensive mushrooms means very little if they spoil in the fridge or lose their aroma in the pan. Each variety has its own rules, and a few of them break every instinct you have about cleaning and cooking vegetables.
As a general principle, store fresh wild mushrooms in a paper bag or wrapped in kitchen paper in the fridge, never in sealed plastic. Plastic traps moisture and turns them slimy within a day.
Yartsa Gunbu
Yartsa Gunbu is almost always sold dried, so keep it in an airtight container somewhere cool, dark and dry. Moisture is its enemy, and humidity will quickly degrade both quality and value.
It is traditionally simmered whole in slow-cooked chicken or duck broth, or steeped as a tea. Counterfeits are common at this price point, so buy only from specialist dealers with verifiable provenance.
European White Truffle
Wrap each white truffle individually in kitchen paper, seal it in a glass jar and refrigerate, changing the paper daily. Avoid the old trick of burying it in rice, which draws out moisture and dulls the aroma. Use it within five days of purchase.
Never cook a white truffle. Brush off any soil, then shave it paper-thin at the last second over a warm, fat-rich dish such as tajarin with butter, risotto or fried eggs. The heat of the plate releases the aroma; the heat of a pan destroys it.
Japanese Matsutake
Never soak or rinse matsutake. Wipe the cap gently with a damp cloth and trim only the soil-caked base of the stem, as much of the aroma sits just beneath the surface.
Tear them lengthwise by hand rather than slicing, which Japanese chefs believe preserves more fragrance. The classic preparations are simple: charcoal grilled with a squeeze of sudachi, steamed in dobin mushi broth, or cooked into matsutake gohan (rice).
Black Truffle (Perigord)
Store black truffles the same way as white, wrapped in paper in a sealed jar. Place a few whole eggs in the jar alongside them and the truffle aroma will permeate the shells within a day or two, giving you truffled scrambled eggs at no extra cost.
Unlike white truffles, black truffles benefit from gentle heat. Grate them into warm sauces, slip thin slices under the skin of a chicken before roasting, or fold them into softened butter. They also freeze well whole, which white truffles do not.
Chanterelle
Brush chanterelles clean rather than washing them. If they are especially gritty, give them a very quick rinse and dry them thoroughly on kitchen paper. Stored in a paper bag in the fridge, they keep for up to a week.
The secret is a dry sauté: put them in a hot pan with no fat until they release and evaporate their water, then add butter and shallots. They are glorious with eggs, cream and roast chicken.
Enoki
Keep enoki in their original packaging in the fridge and use within a week. Trim off the compacted root cluster and separate the strands just before cooking.
Enoki have been linked to listeria outbreaks, so always cook them thoroughly rather than eating them raw. They shine in hot pots and clear soups, wrapped in thin slices of beef, or cooked in a foil parcel with butter and soy.
Morel
Never wash morels under running water. Brush them gently instead, and halve them lengthwise to check the hollow interior for insects or grit. If they need more cleaning, swish them briefly in a bowl of cold water and dry them immediately.
Morels must never be eaten raw; they need thorough cooking. For dried morels, rehydrate them in warm water or stock, then strain the soaking liquid through a coffee filter and add it to your sauce. Morels with cream and vin jaune is a French classic worth seeking out.
Gucchi (Yellow Morel)
Gucchi are usually sold dried, so store them airtight and away from light. Soak them in warm water, then rinse carefully, as the honeycomb folds trap a surprising amount of sand.
Like all morels, they must be fully cooked. In Kashmiri and North Indian cuisine they are cooked into fragrant pulao or stuffed and braised in rich, creamy gravies.
Lobster Mushroom
Lobster mushrooms are dense and keep better than most, up to a week in a paper bag in the fridge. Brush them clean and cut away any soft or discoloured patches before cooking.
They hold their shape beautifully in a sauté and suit butter, garlic and seafood pairings. Their red-orange pigment leaches into fat, so the cooking butter becomes a vivid, flavourful sauce in its own right.
Porcini
Slice through the stem of each porcini before storing to check for insects, then brush clean. Fresh porcini are best eaten within two or three days.
Very young, firm porcini can be shaved raw as a carpaccio with olive oil, lemon and Parmesan. Larger ones are best grilled or pan fried. Save the soaking liquid from dried porcini: it is one of the finest risotto stocks you can make.
Black Trumpet
The hollow funnel shape collects forest debris, so tear black trumpets lengthwise and give them a quick rinse, then dry them thoroughly. Fresh, they last only a few days in the fridge.
They dry exceptionally well, and many chefs grind dried black trumpets into a powder to season sauces and butters. Fresh, they are superb with white fish, scrambled eggs and cream.
Maitake (Hen of the Woods)
Brush rather than wash maitake, and store them wrapped in paper in the fridge for up to a week. Tear the cluster into fronds rather than cutting it.
For the best texture, sear a whole cluster in a hot cast-iron pan and press it down with a heavy pan or weight until the edges turn crisp. Maitake also makes exceptional tempura.
Lion’s Mane
Lion’s mane absorbs water like a sponge, so never soak it. Wipe it clean and keep it in a paper bag in the fridge for up to a week.
Slice it into thick “steaks” and dry-sear them, pressing down to squeeze out moisture, before finishing in butter. Its sweet, crab-like flavour also makes it a favourite substitute in plant-based crab cakes.
Shiitake
Fresh shiitake keep for about a week in the fridge. Remove the tough stems before cooking, but save them for stock.
Dried shiitake have even deeper umami than fresh. For the best results, soak them in cold water in the fridge for several hours, then use both the mushrooms and the liquid as a base for dashi, braises and noodle soups.
Oyster Mushroom
Oyster mushrooms are delicate and short-lived, so use them within three to five days. Avoid washing them; simply tear them apart by hand along their natural lines.
Cook them in a very hot pan so they brown rather than steam. King oyster mushrooms can be scored and seared in butter like scallops.
Kalahari Truffle
Kalahari truffles come out of sandy desert soil, so unlike their European cousins they need a thorough scrub and rinse before cooking. Use them within a few days of purchase.
They are almost always cooked rather than eaten raw. Traditional preparations include roasting in hot embers, stewing in milk or frying in butter, which draws out their mild, nutty character.

Where to Buy Rare Mushrooms
If you want to cook with these mushrooms at home rather than ordering them in a restaurant, sourcing them can be as much of a challenge as the price. Fresh white truffles and matsutake are nearly impossible to find outside specialist importers – in London, try La Fromagerie or Natoora during peak season, both of which carry limited stocks of Perigord truffles and occasionally white truffles when the harvest is good.
